Long, long ago, in days of yore, when sugar was a distant dream on the horizon, folk sweetened their victuals with honey. So when asked to create a special fudge for the archaeologists at the Scatness Dig (the biggest dig in Europe in case you haven't been paying attention in class) we thought it was obvious-take a leaf from Iron Age Man's (or woman - don't panic) recipe book, and create a creamy butter tablet with a goodly dose of heather honey. It's grand.
